Cookie comes from an Italian word "maccarone" which means paste. One of the popular
coconut cookies is "coconut macaroons". Its principal ingredients are egg whites, sugar and shredded dried coconut.
Varieties of coconut macaroons are drizzled with chocolate, typically milk chocolate and dark chocolate or candy;
nuts in many cases are put into coconut macaroons, typically almond slivers, peanuts,pecans, cashews or any other nuts.
2 cups sugar,
1/4 cup milk,
1 cup melted shortening or oil,
3-1/2 cups flour,
2 teaspoons baking powder,
1/2 teaspoon salt,
1 teaspoon vanilla.
Procedure how to make coconut cookies:
Beat eggs, add sugar, milk, and melted shortening or oil, and mix well.
Sift flour, baking powder, and salt together and add to the first mixture.
Add vanilla and mix well. Chill.
Roll out thin on the slightly floured board.
Cut dough having a round fluted cutter, brush each cookie after some milk, and sprinkle with coconut.
Place on the greased baking sheet.
Bake inside a moderate oven (350ŗF) about ten minutes or until brown.
